Secret pancake recipe

Honestly, this recipe is a little treasure and I’m not lying if I say these are some of the best pancakes I ever ate. They can easily keep up with those hyped New York spots where you supposedly get the best pancakes in town.

They are really fluffy and simply delicious. And not bad with blueberries either..

So here is the recipe you definitely need to try.

For two people you’ll need:

180 g flour

1 egg (middle sized)

1/2 teaspoon baking powder

1/2 teaspoon natron

1 teaspoon salt

2 teaspoons sugar (you can also try cane sugar)

225 ml buttermilk.

2 tablespoons butter

a pinch of vanilla bean

oil (sunflower)

maple syrup & sugar powder as needed

1 banana, a handful blueberries, a handful walnuts or whatever fruit you like (or maybe bacon, uuh definitely try bacon as well)

The secret is to use buttermilk – combined with the natron/soda it really makes the batter fluffy.

Start with the flour with mixing the flour, baking soda, natron, salt, sugar and the egg. Melt the butter and add it to the batter. When it’s nice and smooth, leave it for a couple of minutes so the ingredients can react. I then like to add a little pinch of Vanilla.

After about 10-15 minutes you can start heating a laminated pan and add some oil. When the oil is hot enough add a nice scoop of batter. I like to put some blueberries on top so they can melt into the batter.

When you see little bubbles coming up the pancake is ready to be flipped. It takes about 3 minutes for each side to get a nice tan.

So you do this about 6times depending on how big you want to have your pancakes (I usually get 6 out of this batter). Then you’re ready to build the tower.

I recommend to put a few banana slices between each pancake and on top and add the rest of the blueberries as well. Soo it looks like this.

Add some maple syrup and/or some sugar powder as you like and you’re ready to dive in.
